Goat Cheese and Strawberry Tartine
Goat Cheese and Strawberry Tartines or Strawberry Toasts are a perfect summer starter! Plus, they’re SO easy!
Made with fresh, sliced, peak-of-the-season berries and a smear of goat cheese, this Tartine Recipe, AKA open-face toasts, will create a lot of attention, and then elicit loads of compliments!!

Why You Must Make
- It’s a simple recipe with minimal ingredients. Toasted baguette slices were smeared with tangy chèvre, or goat cheese, then topped with luscious, ripe strawberries, a grinding of fresh pepper, and a few drops of balsamic vinegar.
- They are a perfect nibble for that June dinner party, an elegant, delicious snack.
- It’s a recipe from Dorie Greenspan, a notable cookbook author.
Ingredient Notes:
- Kitchen Staples – Black Pepper (freshly ground is best)
- Baguette – Sliced about ⅓ inch thick. Only about half is needed.
- Goat Cheese – Select any favorite variety. I used Chèvre.
- Ripe Strawberries – About 6 large berries, sliced. They should be red and fragrant.
- Aged Balsamic Vinegar – I used an 18-year balsamic to drizzle over the berries. It’s sweet with complex flavors.

Recipe Tips
- To make toasts/crostini/bruschetta, cut a baguette on the diagonal into ½-inch slices.
- Brush lightly with olive oil and place on a baking sheet.
- Cook at 400° for about 8-12 minutes or until golden. You can flip if desired, but the heat of the pan should toast the bottoms.
- Make these when strawberries are sweet and fragrant.
- Use other berries or fruit if desired. Peaches would be delicious when in season.
- If you don’t like goat cheese, substitute another spreadable cheese. Brie or even cream cheese would be tasty.
- The toasts can be made a day or two ahead of time. Just store airtight until needed.
Frequently Asked Questions
I had never heard the word “tartine” till I joined the French Fridays with Dorie group. A tartine is a French open-faced sandwich topped with a rich spread, like this goat cheese or the Nutella we previously featured. I’ve also made French toasts with smoked salmon and roast beef. Dorie likes hers with a chilled glass of white wine…and who’s to argue with the expert!
The bread can vary as can the fruit…fresh or dried…cherries or figs…depending on the season. These were scrumptious. And here’s a shocker…even picky ol’ Bill wanted to try a Goat Cheese and Strawberry Tartine after spying a platter of them in the fridge. I’m slowly wearing him down as there was a time when he wouldn’t touch goat cheese. I’m celebrating the wee victories.
Both tartines and bruschetta are slices of buttered or oiled bread/toast topped with various spreads. Tartines are French and Bruschetta is Italian.

Lol! I’m not the only to eat before heading out to a restaurant ?!? 🙂
Looks amazing!
Wow.. so simple.. yet punched with flavor. Love this. 🙂
Wow! I’m impressed that Bill wanted to try. You didn’t say, but I hope he liked this one. Howard had no interest, so you’re making more progress than I am.
Liz, beautiful and elegantl presentation of your tartines with those wondefully ripe strawberries – nice to read that your husband has taken to liking goat cheese – I guess I am spoiled that way because my taste testers are rather happy goat cheese eaters. This was a wonderful easy little recipe and I am happy to read that we all seemed to have agreed on this!
Have a lovely Monday – sorry, I am running so late wth comments we had burst water pipes over the weekend and they are still trying to fix things now…
Kinda like my celebrating the Peaks, just remember to cheer loudly the wee Victories. And, Liz, don’t get cocky because Bill is Bill is Bill (and, that’s good). Your lovely long oblong platter makes for such a beautiful presentation of whatever recipe you put on it. Always a nice photo. This was a recipe all we Doristas could circle around – easy, simple, even good for a 5pm snack! I’m still shaking my head over this being a small world. My girls and I loved Ames – I was going to grad school, teaching at the J-School and working 2-days-a-week in DM for “The Iowan”. My girls had the the run of Campus Town and I never worried for one minute about their safety. Great public schools. We Iowans are proud of that. See you all in Aspen.
Yay – you’ve gotten hubby to try something new. I loved this one too.
Strawberries with balsamic vinegar sounds interesting. Along with the rest of the ingredients here they sound even better.
Gorgeous photos and so fun to know your hubby tried these- he picked a great one to test unusual combos since this one really delivered. But you really had to have faith to think the pepper, vinegar, strawberry combo would work 🙂 We adored these and I look forward to more soon.
Wonderful combination, could not believe that I would enjoy fruit and balsamic. Your platter
looks so inviting. Have a great weekend.
Strawberries on bread….hmmm, why not? We eat strawberry preserves on bread after all.
Hurrah for wee victories. My husband liked them, but was a little thrown by the idea of strawberries on bread. But that’s not stopping me from making them again tomorrow.
These look amazing Lizzy I love your strawberries look fantastic , here now only I find frozen:(
we are almost in winter!
There’s nothing more satisfying than wearing our husbands down, is there? Your photos are very pretty and inviting!
Oh dear, did my last comment go thru after typing so much??
Guess what, Liz? I’m seeing your last post was 5 mths ago in the blogger reading list :< Looks like we both have the same problem, which probably leads to why I'm less frequent to your blog these days :< Will try my best to chk out your posts more often & maybe manually instead of relying on my reading list……
Another wonderful mix of ingredients & colours! Enjoy your weekend, dear!
You had me at goat cheese because I LOVE it. Matter of fact, there’s a great big hunk of it in my fridge now just waiting to be used for something… 🙂
Lizzy , love this simple and easy to make yummy slices !
