Matafan AKA Fluffy Potato Pancakes
These fluffy potato pancakes were a family pleasing dish. Baked potatoes were riced, combined with eggs, flour and milk before being lightened up with whipped egg whites. Finally the batter was fried in butter, of course!

Matafan Serving Suggestions
I paired our matafan with vinaigrette dressed greens and roasted chicken for a lovely weekday dinner. I wish I had made more of these little devils. They’d be nice for brunch or breakfast, too

This is the second post i have seen doing potato pancakes and honestly I am a little sad I didn’t think of this as well. So awesome- who doesn’t love a pancake and a potato so the combo is fabulous!

Not like the potato pancakes my husband makes but boy do they look good, really more like a real ‘breakfast’ type pancake. I’m going to make these next week with the roast, can’t wait-thanks for the preview!

Oh wow. The egg whites make these so light and fluffy and the butter makes them decadent! I am going to save this and make it for my family on Christmas morning.
