Why You’ll Love this S’mores Dip
I’d seen recipes for this sort of dip floating around the Internet—mostly composed of just a bag of chocolate chips and some larger or jumbo marshmallows.
- I decided to make a ganache instead, adding just one more step to an already easy-peasy recipe.
- Adding cream to the chocolate made it extra rich and silky smooth!
- No campfire is needed so you can serve this yummy dessert dip on Memorial Day (or the 4th of July or Labor Day) without firing up the grill or making a conventional wood-burning fire.
So cream and chocolate were melted together in a skillet, followed by a layer of marshmallows toasted with a short stint under the broiler. Graham crackers were used as dippers for the classic s’mores experience. My gang all gave their seal of approval.
Ingredient Notes
- Semi-sweet or Milk Chocolate Chips – The Ghirardelli brand melts better than Nestles or generic chocolate chips. You may also chop 12 ounces of milk or semi-sweet chocolate bars.
- Heavy Cream – 36-40% butterfat. Makes a rich ganache.
- Large Marshmallows – You will need about 50, though it will vary depending on the size of your skillet.
- Graham Crackers – Separate into smaller rectangles, to use as dippers. Other cookies can be used as well.

A Fourth of July Treat
I shared this s’mores dip with my neighbors on the 4th of July. Some spooned the dip on their crackers, others used two graham crackers to make a more traditional s’mores sandwich.
S’mores are truly a classic American summer treat whether you toast your marshmallows over a campfire or broil them to a golden brown. I gently reheated the leftovers in the oven and the boys hovered over the skillet with spoons. Nick, after some deep thought, surmised that this dip was even better than regular s’mores. I call that a success!
Recipe Tips
This will be the easiest treat in your repertoire! Minimal ingredients and maximum decadence!
- Decide whether you want milk chocolate or semisweet chocolate ganache for the base of your dip.
- This recipe uses chocolate chips for ease of availability, but you can always use 12 ounces of chocolate bars, like Ghirardelli, for an even smoother ganache.
- I like using the microwave as an easy way to melt the chocolate and cream. Make sure to use short time increments, stirring between stopping and restarting.
- A cast iron skillet is fun for presentation, but you can make this in a pie plate, too. Just make sure your dish is safe under the broiler.
- I used a 10-inch diameter skillet, but anything close to that size will work. Your dip will be thinner or thicker depending on whether you use a bigger or smaller pan.
- Top the ganache with marshmallows. Broil carefully to brown and soften the marshmallows.
- PRO-Tip: Watch very carefully while broiling so you do not burn the topping.
- I like serving this dessert dip with graham crackers broken down into small rectangles for perfect dipping, but other cookies will work well, too! Think fudge sticks, vanilla wafers, Biscoff cookies, etc.
- Serve while warm so the chocolate is very scoopable.

Skillet S'mores Dip
A S'mores dip made in a skillet!
Ingredients
- 2 cups chocolate chips, semi-sweet or milk chocolate (or use 12 ounces semi-sweet or milk chocolate, chopped)
- ¼ cup plus 2 tablespoons heavy cream
- Large marshmallows, about 50 (will vary depending on size of your skillet)
- Graham crackers, separated, to use as dippers.
Instructions
- Place cream and chocolate chips into a heat-safe bowl and microwave, stopping and stirring frequently, till almost completely melted.
- Let sit on the counter for a minute, stir till smooth.
- Pour into the bottom of a 9-inch cast-iron skillet. Alternatively, gently melt the chocolate chips and cream over low heat in the skillet. Stir till smooth.
- Preheat broiler. Cover the surface of the chocolate ganache with marshmallows.
- Broil for 1-5 minutes till marshmallows are toasted. Do not walk away from your oven or your topping may burn.
- Time depends on how close your pan is to the heating element.
Notes
Ghirardelli chocolate chips melt better than Nestles, but both will work.
