- Kitchen Staples – Sugar, Eggs, Flour (affiliate link)
- Unbaked Pastry Shell – A good-quality store-bought pie crust is fine. Regular, not deep dish.
- Semi-Sweet Chocolate (affiliate link) – I use Ghirardelli bars because they’re higher quality. In a pinch, chocolate chips can be used.
- Butter – I use salted. If you prefer unsalted, add a little more salt to the batter.
- Vanilla Extract (affiliate link) – Always use pure vanilla extract, never artificial vanilla, for the tastiest results
- Salt – Salt is a flavor enhancer. Your desserts will taste flat without salt. I prefer table salt for baking because its grains are finer than those of kosher salt and will disperse more easily.

Fudgy Brownie Pie
Brownie batter baked in a pastry shell for an irresistible chocolate pie!
Ingredients
- One unbaked 9-inch pastry shell (not deep dish), homemade or store-bought
- 4 ounces semi-sweet chocolate, chopped
- ½ cup (1 stick ) butter, cut into tablespoons
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- ¾ cup flour
- Pinch of salt
Instructions
- If using homemade pie crust, fit it into a 9-inch pie plate. Set aside. Preheat oven to 350º
- Combine chocolate and butter in a microwave-safe bowl. Heat in the microwave using 30-second increments till the chocolate is melted, stirring frequently. Mix in sugar and let cool for a couple of minutes
- Whisk in eggs and vanilla, then stir in flour and salt until combined.
- Pour into pie crust and bake for 40 minutes or until crust is brown and the top of brownies appears set. Cool to room temperature.
- Serve with ice cream or whipped cream if desired.

I’ve never bought a pre-made pie shell but I do often pie pastry because as Jamie Oliver says, (who buys stock cubes), ‘I’m busy’. A shortcut in the kitchen here and there is nothing to feel guilty about. I have never had a brownie pie! This looks delicious. And I was so impressed to read your kids write thank you notes. I do encourage that etiquette but struggle with results! xx
